The following is a recipe for chocolate chip muffins. I tweaked the recipe a bit, because I wanted to make the mini, bite-sized muffins. I made these for my father to take to his father/son meeting at church, and they were a hit! I'm sure they would be for your family as well.
2 cups all-purpose flour
1/3 cup light-brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and then cooled off
2 eggs lightly beaten
1 teaspoon vanilla
1 cup mini chocolate chips
Preheat oven to 400 degrees F.(adjust if needed, to accomodate your oven). Grease your mini- muffin tin. In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients. Add milk mixture and stir just to combine. Stir in chocolate chips. Spoon batter into prepared muffin cups. Bake for about 9 minutes, or until a toothpick or knife inserted into one of the muffins comes out clean. Let cool. ENJOY!! This recipe makes about 36 mini muffins.
If you wanted to make full sized muffins, then follow the recipe in its entirety, except use 1 11/12 ounce package of regular sized chocolate chips, as well as 1/2 cup chopped walnuts or pecans, if desired. Bake in oven for 10-15 minutes. This recipe makes about 12 full sized muffins.
