Meal Mondays! ~Beef and Black-Eyed Pea Soup with Cheddar-Garlic Buscuits!~
One of our family's absolute favorite dishes is Beef and Black Eyed Pea Soup paired with Cheddar-Garlic Biscuits. It is positively delicious! I hope you enjoy it as much as we do! :)
Beef and Black-Eyed Pea Soup
2 lbs. ground beef (or 1 each of ground beef and ground turkey)
1/2 c. green pepper, chopped
1 c. onion, chopped
1 c. celery, chopped
1/2 c. butter
1/2 c. white flour
2 qts. water
28-oz can diced tomatoes
16-oz pkg. frozen black-eyed peas
1 c. carrots, diced
2 T. beef bouillon granules
1 T. pepper
1/2 t. salt
1/4 t. garlic powder
1/4 t. onion powder
1 1/2 c. prepared brown rice (we actually do closer to 2 1/2 c. or so, instead)
Directions:
Brown beef, green pepper, onion and celery in a skillet; drain. Melt butter in a Dutch oven; add flower, whisking until smooth. Cook one minute, stirring constantly. Gradually add water; stir until bubbly. Stir in beef mixture and all remaining ingredients, except rice. Bring to a boil; cover and simmer 45 minutes to 1 hour. Add rice during last 15 minutes. Serves approximately 12 or so.
Cheddar-Garlic Biscuits
These biscuits are actually similar to the Cheddar Bay Biscuits at Red Lobster! :)
2 1/2 c. biscuit baking mix
1 c. shredded Cheddar cheese
3/4 c. milk
1/8 t. garlic powder
1/4 c. plus 2 T. butter, melted and divided
1/2 t. garlic salt
1/2 t. dried parsley
Directions:
Combine baking mix, cheese, milk, garlic powder and 2 tablespoons butter; mix well. Form 1/4 cup mixture into a ball; place on an ungreased baking sheet. Repeat with remaining mixture. Bake at 400 degrees (adjust for your oven, if necessary) for 14-16 minutes. Mix together remaining butter, garlic salt and parsley; brush over biscuits before serving. Makes 12-16 biscuits.
