Meal Mondays #2!

Ladies, I'm so sorry for not posting a Meal Mondays recipe last Monday! It completely slipped my mind.

The following is a recipe for salmon patties. These truly are the best salmon patties I've ever had-they are simply delicious! Even if you usually don't like salmon patties, you will LOVE these, and will want to make them over and over again!


Mouth-watering Salmon Patties

1 (14 3/4 oz.) can salmon

2 cups bread crumbs (we use Italian bread crumbs, for extra flavor!)

1/3 cup finely chopped/minced onion

1/4 cup milk

2 eggs

2 TBSP minced parsley

1 TBSP lemon juice

1/4 tsp salt

1/4 tsp dill weed

a dash of pepper(basically, however much you want)

Drain salmon(keep 2 TBSP of the liquid!) Combine all ingredients including the salmon liquid you saved. Shape into 8 1inch thick patties. Fry in preheated skillet that contains oil.

ENJOY!!

These are so fast and easy, and will surely be a tasty family-pleaser! They'd be great to serve to guests, as well!
