Meal Mondays #5! (on Tuesday)

Ladies, I'm so sorry for not posting my Meal Mondays recipe yesterday! :(

The following is a recipe for Chicken Almond Casserole. This is one of the best casseroles I've had, and it quickly became a favorite in our family. I hope you enjoy it as much as we did! :)
Chicken Almond Casserole

5 cups diced, cooked chicken breasts

2 cups diced celery

3 cups cooked rice

1 (8 oz) can sliced water chestnuts

2 cans cream of chicken soup

1/2 cup sour cream

1/2 cup mayonnaise

2 TBSP chopped onion

2 TBSP lemon juice

1 tsp salt

3/4 tsp white pepper

1/2 cup sliced almonds

Mix above ingredients and put into buttered 13x9 inch dish.

Topping:

1/2 cup almonds

3 cups crumbled corn flakes

2/3 cup butter

Mix above ingredients and sprinkle on top of casserole. Bake at 350 degrees F.(adjust for your oven, if necessary) for 35-45 minutes. Can be prepared ahead of time and refrigerated until baking, if desired. ENJOY!
