Meal Mondays #5!

I don't know about you, but I love lasagna!! The following is a really great lasagna recipe that we tried the other day.


Lasagna Surprise

3/4 cup chopped onion

2 cloves garlic, finely chopped (we use the jar of minced garlic, found in the produce section of the grocery store)

2 TBSP vegetable oil

2 (26 oz.) jars pasta sauce(any flavor)

1 (15 or 16 oz) containter ricotta or cottage cheese(we use ricotta)

1 (10 0z) package frozen chopped spinach, thawed and well drained

1 pound mozzarella cheese, shredded

1/2 cup grated parmesan cheese

2 eggs

1 (1 pound) package lasagna noodles, cooked according to package directions

1 pound ground sausage(we use the turkey sausage-it has a great flavor)

In large pan, cook meat, onion and garlic in the vegetable oil. Add prepared pasta sauce. Simmer 15 minutes. In bowl, mix ricotta, spinach, and 1 cup mozzarella, all the parmesan, and eggs. In 15x9-inch baking dish, layer 2 cups sauce, half the lasagna, half the remaining sauce, all the spinch mixture, half the mozzarella, remaining lasagna and sauce. Cover; bak at 350 F. for 45 minutes or until hot. Uncover; top with remaining mozzarella. Bake 15 minutes. Top with some parsley flakes, if desired. Let stand 15 minutes before serving.

  1. That's funny you should post this now! I just made lasagna for our family on Friday, and we had the leftovers last night. It was the first time I'd made it (yes, we'd been getting the pre-made stuff at Sam's, and I wanted that to change!) and it turned out really good. I used ground beef and didn't have to pre-cook the noodles, which was nice.
